<p><span style="color:#333300;">Mettere il sakè ed il mirin a bollire in una pentola media a fuoco alto. Far bollire per almeno 20 secondi in modo da far evaporare l&#8217;alcool in eccesso.</span></p>
<p><span style="color:#333300;">Abbassare il fuoco al minimo ed aggiungere la pasta di miso gradualmente mescolando bene con un cucchiaio di legno. Dissolto completamente il miso, alzare nuovamente il fuoco ed aggiungere lo zucchero. Continuare a mescolare per evitare che lo zucchero si bruci. Quando il composto risulti del tutto omogeneo togliere dal fuoco e lasciare raffreddare a temperatura ambiente.</span></p>
<p><span style="color:#333300;">Nel frattempo, pulire e sciacquare i filetti di merluzzo, asciugandoli con un panno di carta.</span></p>
<p><span style="color:#333300;">Quando il miso si sarà completamente raffreddato, sistemare i filetti di merluzzo in un contenitore di vetro (con tappo) e ricoprirli interamente con il composto. Tenere da parte una tazza di composto per la guarnizione finale.</span></p>
<p><span style="color:#333300;">Sistemare il contenitore in frigo per almeno 24/36 ore, lasciando i filetti a marinare nel miso.</span></p>
<p><span style="color:#333300;">Il giorno della cottura, pre-riscaldare il forno a 200°C e sistemare una padella antiaderente (preferibilmente con grill) su un fuoco medio. Togliere i filetti dal contenitore, pulendoli dell&#8217;eccesso di salsa. Grigliarli per 2/3 minuti fino a che la superficie sia dorata. Infornarli infine per 10/15 minuti (non lasciare il pesce eccessivamente nel forno per evitare che si asciughi eccessivamente).</span></p>
<div><span style="color:#333300;">Servire i filetti con della verdura rinfrescante con un po&#8217; di salsa miso sul lato. </span></div>
<div><span style="color:#003300;"><span style="color:#333300;">Gli asparagi di contorno sono stati scottati per qualche minuto in padella con pochissimo olio e gli scalogni tritati (pepe e sale per finire).</span>  </span></div>

<p><span style="color:#333300;"><span style="font-family:verdana;">Versare in una teglia imburrata ed informare a forno caldo per circa 30 minuti. Controllare che la torta sia cotta con uno stuzzicadente (le carote tendono a &#8220;bagnare&#8221; l&#8217;impasto più a lungo).</span></span></p>

Al centro sistemare il caprino, tagliato in tre piccole porzioni. Far colare su ogni nido un cucchiaio di miele e poi spolverarci sopra un po&#8217; di pepe (e coriandolo) a piacere.</span></p>
<p><span style="color:#333300;font-family:Verdana;">Infornare per circa 15 minuti (il caprino si deve leggermente dorare e il miele caramellare).  </span><span style="color:#333300;font-family:Verdana;">Ottimo servito come veloce antipasto.</span> </p>

<p align="left">In una pentola di media misura far sciogliere un pezzetto di burro (c.30gr) e, una volta sciolto, aggingere le verdure. Far rosolare per qualche istante a fuoco alto, poi aggiungere il succo di limone (o di arancia a piacere) e spolverare con 2/3 cucchiai di zucchero bianco. Mescolare bene, poi coprire e lasciare cucinare a fuoco basso. Mescolare di tanto in tanto.  Una volta che il liquido sarà quasi interamente evaporato, le verdure dovrebbero essere morbide e quindi cotte. Spolverare di sale prima di servire.</p>

<p align="left">Accendere il forno in modalità grill (200°).  <span style="font-family:verdana;"><span style="color:#333300;">In una padella far sciogliere 30gr di burro e una volta caldo, aggiungere i petti di pollo. Rosolarli per circa 5 minuti per lato senza però cuocerli del tutto. Togliere poi il pollo dalle padella e tenerlo da parte. Nella medesima padella (non lavatela!) aggiungere gli scalogni e mezza mela tritati e lasciare insaporire. Sale e pepe a piacere. Quando gli scalogni si saranno imbruniti, aggiungere ed amalgamare bene 2 cucchiai abbondanti di miele. Rimettere il pollo in padella e sfumare con del vino bianco. </span></span></p>
<p align="left">Una volta che il vino bianco sarà evaporato, sistemare il pollo e le salsa in una teglia da forno, infornare e far grigliare per un paio di minuti. Servire molto caldo, con le verdure glassate e delle fettine di mela scottate con del burro.</p>

<div align="left"><span style="color:#333300;"><span style="font-family:verdana;">Mescolare la farina di mandorle, lo zucchero, il lievito e la semola.  Dopo aver sbattuto a parte le uova, aggiungerle mescolando.  Aggiungere poi l&#8217;acqua di fiori d&#8217;arancio.</p>
<p align="left">Mescolare bene con un cucchiaio di legno.  Quando l&#8217;impasto sarà omogeneo (deve rimanere morbido e appiccicoso), formare con le mani delle palline della dimensione di una noce. Passatele nello zucchero a velo e schiacciatele un po&#8217; per appiattirle.</p>
<p align="left">Scaldare il forno a 180°C.  Sistemare le palline sulla carta forno ed infornare per 20/25 minuti. I biscotti sono pronti quando si crepano e assumono un colore dorato.</p>

<p align="left">Mescolare in una terrina la farina, la frumina, lo zucchero, il lievito e la vanillina, il sale, l&#8217;uvetta, il burro raffreddato, i pinoli, del rum e la buccia grattugiata di limone e arancia.  Amalgamare bene le uova.</p>
<p align="left">Scaldare il forno a 180°C.  Foderare la teglia con la carta forno e sbriciolare dei cornflakes sulla superficie.  Con un cucchiaio formare delle palline del diametro di 4cm.  Sistemarle sulla teglia e fare in modo che i cornflakes aderiscano come impanatura.</p>

<p align="left">Mescolare la farina, il lievito, il sale e pepe, le olive, il grana e il rosmarino in una terrina capiente.  A parte sbattere le uova intere molto bene. Aggiungerle al composto insieme al latte ed al burro fuso (fatto raffreddare).</p>
<p align="left">Mescolare con un cucchiaio di metallo ma senza esagerare, il composto deve rimanere &#8220;grezzo&#8221;.</p>
<p align="left">Riempire gli stampini da muffin (precedentemente passati con dell&#8217;olio) per circa 2/3 della capienza. Mettere in frigorifero per almeno 1 ora.</span></p>

<p><span style="color:#333300;font-family:Verdana;">Mescolare la farina con il lievito. Aggiungere lentamente il latte ed i tuorli delle uova. Montare gli albumi a neve con due prese di sale ed incorporarli lentamente al composto.</span></p>
<p><span style="color:#333300;font-family:Verdana;">Scaldare una padella antiaderente. Quando ben calda ungerla velocemente con del burro. Aggiungere sulla padelle il composto con un mestolo. Lasciar cuocere per circa mezzo minuto e poi girare i pancakes. Lasciare dorare entrambi i lati prima di servire.</span></p>

<span style="color:#333300;font-family:verdana;">Passarla con lo schiacciapatate e raccogliere la polpa in una terrina. Aggiungere subito due buone prese di sale. Lasciare raffreddare.</span></p>
<p align="left"><span style="color:#333300;font-family:verdana;">Una volta fredda, aggiungere della noce moscata grattugiata, l&#8217;uovo intero e la farina. Impastare bene con un cucchiaio: l&#8217;impasto deve risultare morbido ed appiccicoso.</span><br />

<div align="left"><span style="color:#333300;font-family:verdana;">Far bollire abbndante acqua salata. Aiutandosi con un cucchiaino formare dei piccoli gnocchi e farli cadere nell&#8217;acqua bollente. Abbassare la fiamma e lasciare cuocere fino a che gli gnocchi vengono a galla. </span><br />

<div align="left">Pulire bene il pesce. Pelare e sviscerare calamari e seppioline, lavarli bene sotto acqua corrente e tagliarli a pezzetti. Togliere il guscio ai gamberi e pulirli bene.<span style="color:#333300;font-family:Verdana;">In una padella far insaporire l&#8217;aglio tagliato in 4 pezzi, senza farlo scurire. Aggiungere il pesce ben scolato. Far cuocere a fuoco vivo sempre mescolando. il pesce emana la sua acqua naturale, ma dovesse sembrarvi troppo asciutto aggiungere un po&#8217; di acqua calda. </span></div>

<div align="left">Mescolare il parmigiano con il pangrattato ed aggiungere del prezzemolo. Passare il pollo prima nell&#8217;uovo sbattuto e poi nel parmigiano (x2 volte se si vuole un&#8217;impanatura più spessa).</div>

<div align="left">Sistemare il pollo in una teglia da forno leggermente unta di olio. Mettere la teglia in forno a 15-20cm dalla fonte di calore con un goccio di olio per 6 minuti. Successivamente girare il pollo e cuocere per ulteriori 4 minuti.</div>

Nel frattempo mantenere il brodo a bollore su un fuoco vicino.</span><span style="color:#333300;">Aggiungere la zucca a cubetti al soffritto e far insaporire per circa 1 minuto. </span><br />

Passare la zuppa in un passaverdure fino ad ottenere una crema omogenea.</p>
<p align="left">Servire molto calda con la feta tagliata a dadini (o delle scaglie di Grana Padano), una grattugiata di pepe nero ed un filo di olio extravergine di oliva.</p>

Aggiungere la buccia grattugiata del limone.</span></div>

Aggiungere la farina, setacciata con il lievito, un poco per volta amalgamando bene. A poco a poco aggiungere il latte ed il rum fino ad ottenere un impasto denso ma fluido.</span></div>
